Sure, there's such a thing as "white" or sauceless pizzas, but can it be a pizza without sauce is, well, can it really be Italian? Actually, it is Italian and, she says sauceless pizzas deserve their place on the menu, they just don't belong in my mouth. Well maybe sometimes...

You may very well not hold a world record for eating pizza. And, while you won't find me in the Guiness Book of World Records, I definitely think all pizza lovers deserve to be there! Here's one thing that I've found to be true. Her good pizza sauce, the kind that can only be made from authentic Italian pizza sauce recipes, is the fragrance of the rose, the touch of silk and satin, the sensual blending of vine ripe tomatoes, herbs, spices she gently simmers until just the exact moment when the sweetness and savory flavor bursts through the misty steam wafting up from the uncovered pot and screams "I'm DONE!" This tomato sauce is lightly herbed with oregano and basil, yet the basic tomato taste is allowed to shine through. Some pizza aficionados prefer an even simpler sauce than this, but, you'll like the colors and bouquet this sauce adds to your own, home-made pizza. This recipe makes about 2 quarts.
Ingredients: 3 Tbsp. - Butter 16 Oz. - Can of Tomato Puree 3 Tbsp. - Olive Oil 1 Tsp. - Salt 3 Cloves - Garlic, Minced 1/4 Tsp. - Black Pepper 3 Large - Yellow Onions, Minced 1 Tsp. - Whole Oregano 2 Qts. - Canned Whole Italian Tomatoes 1 Tsp. - Whole Basil
In a Dutch oven or large skillet, melt the butter with the olive oil and slowly but completely sauté the garlic and onion. Add the tomatoes, salt,pepper, oregano, basil and puree. Bring to a boil, then simmer covered for two hours. Stir occasionally, crushing the tomatoes with a potato masher. Continue to mash, stir, and simmer partially covered until the sauce reaches the consistency of a rich soup. If you find you have too many or too large tomato seeds left in the sauce, you may run the sauce through a sieve, (strainer). Set the sauce aside to cool or refrigerate before applying it to your pizza dough. White Sauce Recipe for Pizza This rich, creamy smooth white sauce recipe for pizza is a delightful change of pace from tomato-based pizza sauces. Try this buttery white sauce with you next shrimp, chicken or vegetable pizza.
Ingredients:
1/3 cup - Flour 3/4 tsp - Salt 1/8 tsp - Black Pepper 1/8 tsp - Paprika 1/8 tsp - Onion Powder 2 cups - Milk 1 tbsp - Sweet, Lightly-Salted Butter 1 tbsp - Fresh Garlic, Finely-Minced (Optional)
Preparation:
In a sauce pan, on low heat, melt the butter and slowly add the flour, combine and stir constantly with a whip for 3 minutes.
Raise heat to medium. Add 1/2 cup of milk, whipping until the sauce begins to cream, add another 1/2 cup milk, repeat.
Add the last 1/2 cup of milk, stirring until the sauce is bubbly (low boil), and creamy, about 3 minutes.
Add the remaining seasonings, and cook a final 2 minutes, or until the sauce reaches a rich, heavy, gravy-like consistency.
Don't walk away from the stove and let it burn...keep stirring! Remove from heat.
Let the sauce cool to room temperature before saucing your pizza with it.
Optional Preparation, Add Extra Garlic Zing:
